Creamy avocado, savory ham, and a perfectly poached egg are stacked high on golden toast and finished with a swirl of fresh basil pesto for a bright, flavorful twist.

Ingredients

For the Benedict:

  • 4 slices of your favorite bread, toasted

  • 4 thin slices of ham

  • 2 medium avocados, sliced

  • 1 medium tomato, sliced

  • 4 eggs, poached (see instructions below)

  • 4 tbsp Fresh Basil Pesto (recipe below)

  • Several fresh basil leaves, for garnish

  • Freshly cracked black pepper


How to Poach the Perfect Egg

  1. Fill a deep saucepan with 2–3 inches of water and bring to a gentle simmer.
    Cover the pot to speed things up, then place your lid on the Lid Holder when you’re ready to cook to keep your counter clean and your hands free.

  2. Add a splash of white vinegar (optional, but helps the whites stay together).

  3. Crack an egg into a small bowl.

  4. Swirl the water into a gentle whirlpool.

  5. Gently slide the egg into the center.

  6. Poach for 3–4 minutes, then lift out with a slotted spoon.

  7. Cooking in batches? Place cooked eggs on a paper towel-lined plate or one of our cheeky kitchen towels to absorb excess water while you prep the others.

  8. Have a larger, wide pan? You can poach 2–4 eggs at once by skipping the whirlpool and sliding them in separately.

How to Assemble:

  1. Place two slices of toast on each plate and top each with a slice of ham.

  2. Layer on avocado and tomato slices.

  3. Add one poached egg per toast.

  4. Spoon on the pesto.

  5. Finish with cracked black pepper and a few fresh basil leaves.


Fresh Basil Pesto

Ingredients:

  • 2 cups fresh basil leaves, packed

  • 1/2 cup freshly grated Parmesan cheese

  • 1/3 cup extra virgin olive oil

  • 1/4 cup pine nuts (or walnuts)

  • 2 garlic cloves

  • Juice of 1/2 lemon

  • Salt & pepper, to taste

Instructions:

  1. Prep the herbs: Use Herbie the Herb Stripper to remove basil leaves from the stems in seconds. Lightly bruise the leaves using Herbie’s flat side to release more flavor.

  2. Grate the garlic and cheese: Rub the garlic cloves over the Grate Plate until you get a fine paste. Then grate a wedge of Parmesan. (Freshly grated cheese not only melts better—it also avoids the anti-caking agents found in pre-grated cheese that can dull flavor.)

  3. Blend: In a food processor, combine basil, garlic paste, grated Parmesan, and nuts. Pulse until roughly chopped.

  4. Drizzle in the olive oil while blending until smooth. Add lemon juice, salt, and pepper to taste.

  5. Store in the fridge for up to 5 days in an airtight container.
